Influence of Spray Drying on Encapsulation Efficiencies and Structure of Casein Micelles Loaded with Anthraquinones Extracted from Aloe vera Plant

The encapsulation efficiency (EE%) and structural changes within the Anthraquinones-encapsulated casein micelles (CM) powders were evaluated in this study. For purpose, anthraquinone powder extracted from Aloevera, its freeze-dried (FDP) whole leaf Aloe vera gel (WLAG) has been encapsulated CM through ultrasonication prior to spray dying produce nanocapsules: (CMAQP), (CMFDP) Whole aloe (CMWLAG). Based on pH of solution before drying, CMAQP had highest EE% following drying. However, due air-interface-related dehydration stresses, SD resulted a slight decrease anthraquinones (aloin, aloe-emodin, rhein) CMAQP. Meanwhile, significant increase CMFDP was observed compared aqueous state. According SEM findings, particle size 2.39 µm ξ-potential ~−17mV. rough fractal surface with large sizes potential 3.49 ~−11mV respectively. deformed, having least lowest (−4.5 mV).
